What is the part of the portable flash that fits onto the camera hot shoe?

Those type of flash units are known as hot shoe mounting as the foot of the flashgun slides into the hot shoe on the camera.
Think of feet and shoes and you'll realise where the names came from.
The original shoes were known as accessory shoes and they did not have electronic contacts built in, it's those electronic contacts that make the shoe "hot" and enable flash units dedicated to specific cameras to be used.
